Mediterranean Zucchini Boats

I love zucchini! I eat them every week, either roasted or raw in a salad. This recipe is very easy and fast. All you need to do is chop the ingredients and shove the half zucchinis in the oven. If you need some protein, you can add garbanzo beans, chicken breast or ground pork, even tuna.
Ingredients:
Zucchinis
Calamata (or green) olives
Bell pepper
Tomato
Italian seasoning
Olive oil
Feta cheese
Cheddar cheese
Fresh parsley (optional)
The recipe also calls for garlic which I don't eat because it boosts the immune system. Great for everyone, except for us who live with an autoimmune disease. I just use onion powder.
Directions:
Preheat oven to 400F
Prepare the zucchini boats. Chop off the ends of the zucchinis, and cut them in half lengthwise. Scoop out the middle.
Chop and mix your vegetables and spices with a little olive oil.
Fill the zucchini boats with the vegetable mix.
Place them on a baking sheet covered with parchment paper.
Bake them for 25 minutes.
Top them with the cheeses, and bake for another 10 minutes or until cheeses are melted. If you don't want both types of cheeses, I recommend to use cheddar.
Garnish with fresh parsley.
